Even better, this treat is autoimmune paleo, specific carbohydrate diet, and paleo compliant. If you are looking for a cute, belly friendly treat to bring to a Fourth of July barbecue, give this Red White & Blueberry Ice Cream a try.
The Blueberry Layer
Combine half a frozen banana, 1/4 cup full fat coconut milk, and 2 cups frozen blueberries in a food processor. Evenly spread the blueberry ice cream into five mason jars or a container of choice. If you are using mason jars, make sure to wipe the sides of jars before adding the white layer.
The White Layer
Blend 2 1/2 frozen bananas with 1/4 cup full fat coconut milk, and you have your white layer. You may want to freeze the jars as you are making the subsequent layers, so the ice cream does not melt as fast. Evenly spread the white layer between the mason jars.
The Red Layer
Blend 2 cups frozen strawberries with 1/4 cup full fat coconut, and you have your red layer. Spread the red layer evenly between the mason jars, and top with more frozen blueberries. If you like the ice cream more smoothie-like, enjoy immediately. If not, freeze at least one hour and enjoy!
If you like your ice cream sweeter, you can add a little of your favorite sweetener to your ice cream layers.

- 3/4 cup full fat coconut milk
- 2 cups frozen blueberries
- 3 frozen bananas, halved
- 2 cups frozen strawberries

- Combine 2 cups of blueberries, 1/2 frozen banana, and 1/4 cup full fat coconut milk in a food processor (or blender)
- Blend the ingredients until your "blue" layer is smooth
- Evenly distribute the blueberry ice cream into 5 small mason jars or a container of choice
- Blend 2 1/2 frozen bananas and 1/4 cup full fat coconut milk until smooth
- Evenly distribute the "white" layer into the mason jars
- Blend 2 cups frozen strawberries with 1/4 cup full fat coconut milk until smooth
- Evenly distribute the "red" layer into the mason jars
- Freeze one hour & enjoy immediately or store in your freezer for a sweet, healthy treat
