Chicken apple sausage & zoodles is one of my favorite 10 minute dinners. If I do not prepare dinner in advance, I will likely not cook anything healthy after a busy day. That’s why I love having zucchini and chicken apple sausage around. All have have to do is cut the sausage, brown it in a pan with olive oil, add spiralized zucchini to the pan with the spices, and dinner is complete.
To spiralize the zucchini, I use either a veggetti or veggie bullet. The veggetti is great for spiralizing zucchini and for traveling, as it is tiny. The veggie bullet is great for spiralizing a greater quantity of vegetables or tougher vegetables like squashes. The veggie bullet is a must have for making sweet potato egg nests.

- 2 tbsp olive oil
- 4 chicken apple sausages, chopped *I use Aidell's fully cooked chicken apple sausages
- 3 medium zucchinis, spiralized
- 1 tsp garlic powder *can sub minced garlic
- 1 tsp ground basil
- 1/2 tsp sea salt
- 1 tsp onion powder
- 1 tsp minced onion

- Wash the zucchini, chop off the ends, and spiralize
- Cut the sausages into thin slices
- Heat the olive oil in a large skillet on medium heat
- Brown the sausage in the skillet (3-4 minutes)
- Once the sausage slices are brown, add the zoodles and spices to the skillet
- You may need to add more olive oil if the skillet is dry
- Cook the zoodles for 5 minutes, and serve while hot
