Do you have a birthday coming up, but you are on a restricted diet? Maybe you do not want to halt your weight loss journey. Perhaps you are one of the strange people who does not like cake. Well this gluten free, dairy free, refined sugar free, AIP, paleo, SCD, Whole30 approved, healthy birthday cake is perfect for you. It is arguably the healthiest birthday cake ever.
Moderators vs Abstainers
In all the years I have watched my mom diet, I have noticed a pattern. She is always so healthy and sticks to her diet perfectly until her birthday hits. She eats cake, and then, BAM. The diet is over. Thankfully, she has maintained her weight loss the past three years on AIP (three birthdays strong). I find that most people are abstainers at the beginning of their diets when it comes to treats. These abstainers find it easier to completely avoid sugary treats to stick to their diets, as one cheat may lead to days of unhealthy eating.
On the other hand, moderators can eat a treat, like my Perfect Paleo Chocolate Mug Cake and go right back to their healthy eating habits. Many abstainers who have been on a particular diet for a long time can transition to become moderators. Their diets become more of a lifestyle change. One piece of dark chocolate or a small piece of birthday cake will not lead to a binge.
Whole30 Approved Cake
This year, my mom and her twin were mid Whole30 when their birthdays hit. Whole30 is a thirty day reset in which participants cannot eat grains, dairy, legumes, or refined sugar. They also cannot make any treats that resemble unhealthy treats, even if they are made with compliant ingredients. This includes pancakes, cookies, fries, chips, and anything that would trigger unhealthy eating/cravings. I decided to make them a Whole30 approved, healthy birthday cake. It was so easy to make, as natural as a cake can get, and absolutely delicious.
Healthy Birthday Cake AKA Leaning Tower of Watermelon
I kind of made this cake in a rush, so hopefully yours turns out prettier than mine. First, cut the two ends off the watermelon, and remove the rind.
Carve the watermelon into a cylindrical shape, then cut it into three pieces. Carve two of the pieces into cylinders with increasingly smaller diameters. Then, stack the three pieces of your “cake” on top of each other.
Cut the crown and stem off the pineapple. Slice the skin off the pineapple with a sharp knife. Cut the pineapple into thin circular slices. Then, use a cookie cutter to cut the pineapple into beautiful shapes.
Cut the two ends off of two kiwis and peel the skin off with a sharp knife. Cut the kiwis each into four small slices. Place four kiwi slices in between each of the watermelon slices. Next, place the pineapple shapes around the cake, and secure them with toothpicks.
Slice strawberries in half, and secure the halves onto the pineapple with toothpicks. Decorate the bottom of the plate with blueberries and grapes, then enjoy!

- 1 watermelon
- 1 pineapple
- 2 kiwis
- 6 strawberries
- handful grapes
- handful blueberries
- 12 toothpicks
- cookie cutters
Ingredients

- Cut off the two ends of the watermelon with a sharp knife
- Remove the rind with the knife
- Carve the watermelon into a cylindrical shape
- Cut the watermelon into 3 pieces to form the "layers" of the cake
- Place one watermelon layer on a serving plate, and carve the other two layers into smaller circles. A paring knife works best.
- Stack your three layers of cake on top of each other
- Cut the stem and crown off the pineapple, and skin the pineapple
- Chop the pineapple into thin circular slices, then use cookie cutters to cut the pineapple into cute shapes
- Cut the two ends off the two kiwis, and remove the skin with a paring knife
- Cut each kiwi into four slices, and place the four kiwi slices between each cake layer
- Secure the layers with toothpicks
- Slice the strawberries in half, leaving the steam and leaves on
- Secure the pineapple shapes and strawberry halves around the cake with toothpicks
- Decorate the bottom of the plate with blueberries and grapes
- Sing happy birthday & enjoy your healthy birthday cake!
