In a large mixing bowl, combine the dry ingredients (almond flour, coconut flour, baking soda, sea salt, ground cinnamon)
Separate the eggs and whisk the egg whites until they are foamy
In a separate bowl, mix the egg yolks, maple syrup, vanilla extract and apple cider vinegar
In a double boiler (or small pot of water with a bowl on top), melt the chocolate chips and coconut oil
While the chocolate is melting, combine the wet and dry ingredients minus the egg whites. Once the chocolate has melted, add it to the mixture and mix until well combined. Fold in the egg whites.
Grease the donut pan generously with coconut oil and pipe the batter evenly into the 6 donut molds. An easy way to do this is to put the batter in a large plastic bag and slice an end
Bake about 15 minutes or until the toothpick comes out clean. Let the donuts cool in the mold for 5 minutes before placing them onto a cooling rack
Chocolate Glaze
While the donuts are cooling, melt the chocolate chips with coconut oil in a double broiler
Once the donuts have cooled, dip them into the chocolate. If you want to fully cover the donuts in chocolate, double the glaze recipe
