Do those of you on paleo diets struggle with breakfast ideas? I know I do, especially when I first started my healing journey. I would see others eating salads and tons of veggies for breakfast, and there’s no way I could at the beginning. Paleo sweet potato egg nests might be thee answer. They are the perfect nutrient dense breakfast that the whole family will ask for over and over again. If you follow the specific carbohydrate diet (SCD), you can make these with spiralized butternut squash or carrots.
This winter, I received a Veggie Bullet and wanted to try it out with potatoes. I am also a fan of quick, healthy recipes that can be prepped ahead of time. This sweet potato egg nest recipe is so simple and delicious. You can spiralize the potatoes in advance, toss them with olive oil and spices, then throw them in the oven for a breakfast ready in less than 30 minutes.
To make the egg nests more nutrient dense, you could add spiralized zucchini and carrots.

- 2 medium sweet potatos, spiralized *sub spiralized butternut squash for SCD
- 1-2 tbsp olive oil
- dash garlic powder
- dash onion powder
- dash sea salt
- 4 large eggs
Ingredients

- Preheat the oven to 350 degrees Fahrenheit
- Wash the sweet potatoes and cut off the two ends
- Spiralize the sweet potatoes and put them in a medium sized bowl
- Mix the olive oil and seasonings into the sweet potatoes
- Lay parchment paper on a baking sheet, and split the sweet potato mixture into four even "nests"
- Cook the sweet potato nests for 15 minutes, then drop an egg onto each nest
- Cook the eggs for 10-15 minutes for a runny egg, or longer if you like them more cooked
- Eat these paleo sweet potato egg nests while hot. They go nicely with avocado on the side.
