I am a huge fan of dessert and love creating healthier treats made with “real” food. When experimenting with my own diet to treat my Crohn’s disease, I noticed there were not as many specific carbohydrate diet (SCD) recipes as there were paleo recipes. My goal is to create more fun, delicious SCD recipes that taste just as delicious as the gluten-filled recipes we grew up eating. These SCD blondies are made with almond butter and sweetened with honey. They are also paleo, gluten free, and dairy free.
Real Simple Ingredients
These SCD blondies taste delicious as is or add in chocolate chips if you tolerate chocolate alright. The ingredients in these blondies are simple, just almond flour, almond butter, coconut oil, honey, vanilla extract, one egg, cinnamon, baking soda, and sea salt.

- 1 cup creamy almond butter
- 1/2 cup honey
- 1/4 cup coconut oil
- 1.5 tsp vanilla extract
- 1 egg
- 1/2 cup almond flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt *use a pinch if the almond butter is salted
- 1/4 tsp cinnamon
Ingredients

- Preheat the oven to 350° F
- Mix all the ingredients together until well combined
- Line an 8" x 8" pan with parchment paper, and evenly spread the batter
- Bake for 20-22 minutes
- Allow the blondies to cool, slice, then enjoy!

Hi are you able to swap the almond flour with coconut flour? If so how much coconut flour is needed,

I’m sure there is a way, but baking with coconut flour is very different than almond flour. I haven’t tried it in this recipe. Let me know if you try it out.
