This AIP Sausage & Vegetable Stir-fry is an easy weeknight dinner that is ready in less than 20 minutes. It is bursting with flavor, extremely healthy, and also paleo, gluten free, dairy free, and whole30 compliant. Stir-fries are also easy ways to eat several servings of veggies without trying.
I discovered AIP-compliant sausage my second year of medical school, and it was a game changer for quick dinners. All I have to do is throw the sausage, some veggies, and spices in a skillet, and dinner is ready in minutes. Sometimes, I will make huge stir-fries and eat them for days. When I do not have fresh produce or do not feel like chopping veggies, I will use frozen stir-fry veggies. I will often use coconut aminos (AIP) or coconut aminos teriyaki sauce (paleo) for seasoning.

- 2 tbsp olive oil
- 4 sausages, sliced I used Aidells chicken apple sausage
- 1 cup water (or broth)
- 4 medium carrots, chopped
- 1 large crown of broccoli, sliced
- 3 medium zucchinis, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp minced onion
- 2 tbsp coconut aminos

- Heat the olive oil in a large skillet on medium heat
- Slice the sausages and brown in the skillet
- Add the water (or broth), chopped carrots and broccoli to the skillet and cover the skillet
- Cook covered for 8-10 minutes, then add in the zucchini, spices, and coconut aminos
- Continue cooking the stir-fry 3-5 minutes. If there is still significant water in the skillet, drain it, and brown the veggies
- Adjust the seasonings to taste, and serve immediately

Is Aidells sausage really AIP compliant? It includes “spices”.

I’m not 100% sure – sometimes “spices” can indicate . This sausage has never bothered me so I tend to eat it even when I’m being stricter AIP, but I can see why some people would avoid it during the elimination phase then reintroduce it earlier.
