Finding a filling snack that is paleo and travels well can be a challenge. These homemade pecan pie larabars are a super delicious, easy, and healthy snack that you can prepare ahead. They are paleo, specific carbohydrate diet friendly (SCD), gluten free, dairy free, vegan, and refined sugar free. You may form them into bars or balls, and they freeze really well.

Instructions
- Soak the dates in warm water for 5 minutes
- Remove the dates from the water and pat dry
- Pulse the dates in a food processor until well combined. If they still seem dry, add 1 tbsp of water
- Add the nuts to the food processor and pulse until the bars are to the consistency of your liking
- Line a container with parchment paper, and spread the fruit and nut mixture evenly (you may also form them into date balls)
- Refrigerate for 20 minutes, cut into 6 bars/squares, and try not to eat it all at once!
