I was so excited when I saw that Trader Joe’s created cauliflower gnocchi. Others posted on social media like crazy, and stores couldn’t stay stocked. When I finally purchased the gnocchi and tried it, I was disappointed. The gnocchi tasted chewy and gummy. I did not know the taste of true Italian gnocchi but knew chewy was not right.

How to cook Trader Joe’s Cauliflower Gnocchi well? The secret to making this cauliflower gnocchi delicious is completely defrosting the gnocchi prior to cooking it. You also must dry the gnocchi. Make sure the cooking fat is hot before placing the gnocchi into the skillet, then cook at least 2 minutes on each side. The edges will be golden brown and crispy. This made all the difference. The gnocchi tasted light, crispy and much less chewy. I used my favorite sauce, Rao's homemade marinara, and this meal was perfect! You can also use my AIP no-tomato sauce to make this meal fully AIP compliant.

- 2 tbsp cooking fat I used grass fed butter
- 2 packages Trader Joe's Cauliflower Gnocchi
- 2/3 cup marinara sauce I used Rao's
- 4 chicken apple sausages
- dash ground basil
- dash sea salt
- dash ground oregano

- Defrost the gnocchi naturally or in the microwave. If microwaving, pour the contents of one bag into a large cereal bowl. Cover with a wet paper towel and microwave 3-6 minutes on 50% power or until the gnocchi are defrosted
- Pat the gnocchi dry and repeat with the second bag
- Heat the cooking oil in the skillet on medium heat and cook the gnocchi 2 minutes on each side or until golden brown and crispy
- Chop the sausage into bite sized pieces and fry them in either another skillet or the same one you just cooked the gnocchi in, browning the sausage on each side (follow the directions on the sausage in case they are not fully cooked)
- Combine the sausage and gnocchi, top with warmed marinara sauce and sprinkle the basil, sea salt and oregano on top
- Enjoy while hot
