Quarantine is all about the baking. I’m not kidding, my sister and I have probably baked at least 8 batches of cookies. One of our favorites was a flour-less peanut butter cookie that used regular sugar. I decided to attempt a specific carbohydrate diet (SCD) compliant cookie and these SCD peanut butter cookies were born.
SCD Peanut Butter Cookies
These flour-less peanut butter cookies are the real deal. They spread out and rise nicely and have a great hint of sweetness. I prefer baking with maple syrup rather than honey purely due to taste, but I do not mind the hint of honey taste here.

One of my favorite parts about baking any kind of SCD or paleo recipe is how simple the ingredients are. For these cookies, you only need 6 simple ingredients you probably already have at home.

- 1 cup natural peanut butter
- 1/2 cup honey
- 1 tsp vanilla extract
- 1 egg
- 2/3 cup almond flour
- 1/2 tsp baking soda
Ingredients

- Preheat the oven to 350° F
- Mix all the ingredients together until thoroughly combined
- Line a cookie sheet with parchment paper and drop spoonfuls of batter onto the parchment paper
- The batter will be very sticky - you may need to use your fingers or a spoon to swirl the batter around and form it into more of a cookie shape
- Bake for 11-13 minutes or until the cookies are golden brown
