Many people ask how I am able to get through medical school with a chronic disease that requires cooking all of my own food, self-care, and more. The answer is my mother. Even though she lives 2.5 hours away, she always makes sure my freezer is stocked with these AIP turkey patties, cooked chicken, and butternut squash soup. Whenever I come home, my mom will send me back with cooked veggies, sweet potatoes, snacks, and anything else she can cook to make my life a little easier. My friends call my house “The Turkey Patty Factory,” since my mom makes huge batches of them, and I eat them every single day. I am eternally grateful for my mom who takes so much time out of her life to make mine a little easier.
These turkey patties are simply flavored with garlic and onion, so they pair well with virtually any sides. I will often eat turkey patties with butternut squash soup, steamed veggies, stir-fries, sweet potato, eggs, and in salads. One minute in the microwave, and these babies are ready. Or I’ll defrost them overnight for lunch the following day.
Meal prep a bunch of these turkey patties to keep in the freezer for a quick source of protein to add to any meal. If you want to hop on the turkey patty train and join the turkey patty party, give these babies a try!
